Menu Plan Monday


We’re going to give this a shot. I used to be so good at planning meals and something happened.

And since we’re moving soon, I also would like to need to empty out the abundance from my freezer and pantry. I’m going to try to GOING to spend less than $15 a week for my grocery budget in March (and possibly April.)

So.

Monday–leftover arroz con pollo I made last week. I might try to make something “new” out of this. Wrap it in a tortilla or something.

Tuesday–lentil and ham soup

Wednesday–leftover flautas Phil made over the weekend

Thursday–Oriental Chicken Wraps (homemade teriyaki sauce)

Friday–Leftovers

Saturday–hoisin and honey pork (homemade hoisin sauce)

Sunday–Crockpot great northern beans and smoked sausage

I have a lot of eggs, so I think I’ll make some egg salad for Phil’s lunchbox. I also still have some frozen deli meat I scored on a sale a month or so ago. Zane and I will eat leftovers for lunches. They’ll be plenty, I’m sure.

My grocery list looks like this:

carrots
celery
onions
Sprite
lettuce
green onions
chow mein noodles
manderin oranges
bread

I should be able to do that on $15.

  1. I made egg salad for the first time last week and amazed myself, considering I really don’t like eggs much. I actually liked it. I think the key was that I used my food processor to chop up the hard boiled eggs, so it ended up being a pretty quick task without a bunch of large gross egg pieces. 😉 I then doctored up a recipe I found on allrecipes.com Of course the large amount of Helman’s on my homemade bread helped too.
    I also make ham and beans a lot. I usually make them with leftover ham or ham hocks. I make cornbread for the everyone else, but I eat my the way my dad ate them during the depression. On top of a buttered piece of white bread and then with ketchup on top of that. It sounds disgusting but tastes oh, so good!
    Saw a video on CNN this morning about how hard it is for a family of four to survive on $580/mo in food stamps. Maybe groceries are just a lot more in other places, but at $580/mo, our family could eat fairly well, and my kids eat all their meals at home, unlike the family they portrayed where the kids eat breakfast and lunch at school! Sorry, it’s not that I begrudge families getting assistance, it’s just that I think people don’t know how to cook from scratch anymore, or plan meals. Okay, I’ll get off my soapbox! (homemade soap too by the way) 😉

  2. Way to go for using what you have. I’m about down to the slim pickin’s – everything about bare (except meat) Hard to even find anything to eat for lunch LOL
